While we consider a decent cup of coffee reason enough to get out of bed each morning, it turns out there’s an even grander way of professing our love for all thing java – by marking International Coffee Day on Saturday, October 1st.

While caffeine addicts across the globe will be celebrating with coffee tastings, discounted cups of joe, complimentary donuts, and even film screenings, Savoir Flair decided to brush up on the basics. We spoke to barista extraordinaire Antony Papandreou of Nightjar Coffee, a man who has made it his full-time job and mission in life to understand the ins and outs of getting caffeinated correctly. Read on to discover his ten commandments of coffee.

Rule 1

Decaf isn't coffee. It's just a hot drink made from coffee beans.

Rule 2

Good baristas always grind on demand. Pre-grinding leads to sub-standard results.

Rule 3

If an Italian asks you to make a coffee, save yourself the trouble and just let them make it themselves. They haven't changed how they do it in over a century – they aren't going to change now.

Rule 4

The difference in fat content between full-fat and skinny milk doesn't quite compensate for that slice of double-chocolate fudge cake.

Rule 5

Extra hot: If you like your coffee so hot that you have to wait ten minutes to drink it, why not just order it ten minutes later? After milk has been super heated, it becomes denatured. This is when the proteins are destroyed. It's the first stage in the decomposition of milk. It's gross.

Rule 6

It's espresso. Not expresso.

Rule 7

Dairy alternatives? Black coffee. Sorted.

Rule 8

Please don't ask for a weak latte. It's already weak enough.

Rule 9

Never add sugar or milk to filter coffees. If the delicate and subtle flavors are going to be completely ruined, you may as well just order a latte.

Rule 10

Never ever ask for a dry cappuccino... because every time you do, a hipster barista somewhere sheds a tear.
