After a long week, there is nothing like a cozy breakfast with your friends on Friday morning.
I like to prepare a baked French toast ahead of time and just pop it in the oven right before my guests arrive. The result is a moist, custard-like consistency, perfect with fresh berries and a good drizzle of my favorite Montreal maple syrup. I love using crushed pistachios on top for a little bit of textured crunch. It’s the perfect way to start a lazy Friday.
Baked French Toast
- 1 loaf of brioche bread (sliced into thick slices)
- 4 eggs
- 2 cups of full cream milk
- 1/3 cup granulated sugar
- 2 tbsp dark brown sugar
- ½ tsp ground cinnamon
- Pinch of sea salt
- 1 vanilla bean scraped
- 1 tsp lemon zest
- 1 cup of your favorite berries
- Crushed pistachios and icing sugar for finishing
Whisk together the eggs, milk, sugars, cinnamon, salt, vanilla bean, and lemon zest in a bowl.
Arrange the sliced brioche in a deep baking dish and pour the egg mixture evenly over the bread. Scatter the berries over it and place in the fridge to soak for at least an hour (or overnight).
Bake in the oven at 180°C for around 40-45 minutes, until the bread is golden brown and the liquid is set.
Finish with crushed pistachios, a dusting of icing sugar and good quality pure maple syrup.
