The Michelin Guide Dubai was finally released this morning at 10 AM to an exclusive, invite-only event at the Dubai Opera. There are a shocking 69 restaurants that have found their names on the well-respected list. Moreover, Michelin has awarded nine restaurants one star, two restaurants two stars.

The new 1-star restaurants are 11 Woodfire founded by Chef Akmal Anuar, Al Muntaha headed by acclaimed Chef Saverio Sbaragli, Italian fine-dining Armani Ristorante, contemporary Chinese restaurant Hakkasan, Hoseki helmed by Chef Masahiro Sugiyama, progressive fine-dining experience Ossiano by Chef Grégoire Berger, Tasca by culinary genius José Avillez, Chef Massimo Bottura’s Torno Subito, and Trèsind Studio by Chef Himanshu Saini.

The ultimate winners of the day, however, are none other than Il Ristorante – Niko Romito at Bulgari Resort Dubai and STAY by Yannick Alléno at One&Only The Palm, whose restaurants were awarded two stars.

It was announced last March that Michelin was officially launching its first guide in Dubai. As the first stop on Michelin’s foray into the Middle East, it could not have selected a better destination for its guide than the City of Life. With the release of the first MENA 50 Best list that came out just this past February, it was apparent that this part of the world offered a rich and diverse culinary scene. Dubai restaurants easily won the majority of spots on the list, as well as six places in the top ten (including 3Fils in the number one spot).

Chefs across Dubai have been quieting the music and readying their restaurants for the infamously anonymous inspectors, while people across the city have been making guesses and predictions about not just who will be on the list, but who will have nabbed one or more of those coveted stars.

Michelin proudly promotes the fact that a Michelin star in Tokyo is equivalent to a Michelin star in Paris, New York, London, and now Dubai. Each Michelin inspector is from the food industry, and receives three years of training before they are released into the field, ensuring that the standards across all inspectors are the same. These inspectors pay for their own meal, and they are anonymous. A restaurant has no idea who they are, when they are coming, and if they are currently dining with them at this very moment. The suspense is amazing.

An inspector will eat over 300 meals a year, so their palette is quite refined. As they taste their way through a particular city, they are looking for five criteria when deciding whether or not to include a restaurant on the guide, and award it with one, two, or three stars (three stars being the highest). The five key areas being critiqued are: consistency, quality of the product, cooking techniques, the harmony and balance of flavors, and our favorite, the personality of the chef as expressed on the plate. Recently, Michelin has also added a new category which awards a Green Star for sustainably-minded chefs and restaurants, and Lowe was the one Dubai restaurant awarded the recognition.
