In this recipe, you’ll also find a creamy Greek yogurt dressing kicked up with garlic, lemon, and parsley in place of the typical, decadent blue-cheese topping. We recommend pairing this healthier version of a buffalo burger with a side of baked sweet-potato fries for the perfect weekday dinner.
For the Greek Yogurt Dressing
- ½ cup Greek yogurt
- 1 garlic clove, finely chopped
- 3 tbsp fresh parsley, chopped
- 3 tbsp fresh lemon juice
- ½ tsp salt
- ¼ tsp cracked black pepper
For the Burger
- ½ cup flour
- 2 tsp onion powder
- 1 tsp garlic powder
- ½ tsp smoked paprika
- 1 tsp salt
- ½ tsp cracked black pepper
- 1 egg, beaten
- ½ cup hot sauce
- ½ cup milk
- ¼ cup water
- 1 hearty bun, split in half
- 2 cauliflower 'steaks'
- Lettuce, tomato slices, red onion slices, and any other toppings you want to add
Preheat the oven to 230°C. In a shallow dish, whisk the flour, onion powder, garlic powder, smoked paprika, salt, and pepper until combined. Add in the beaten egg, hot sauce, milk, and water and mix until a batter consistency is reached. Dip the cauliflower steaks in the batter and make sure both sides are evenly coated.
Place the cauliflower steaks on a baking tray lined with parchment paper. Bake in the oven for 25 minutes until slightly crisp.
While the cauliflower steaks are baking, prepare the Greek yogurt dressing by adding all the ingredients into a blender or food processor and blending till combined and smooth.
Once the cauliflower steaks are cooked, drizzle the remaining hot sauce on top. Assemble the buffalo cauliflower burgers on the bun and add the dressing and toppings, such as lettuce, tomato, pickles, and red onion.
