INGREDIENTS

Main Ingredients:

  • 20 grams rocca leaves
  • 1 gram mint sprigs
  • 30ml cherry tomato
  • 5 gr amswalnut, toasted
  • 10 grams mushroom
  • 10 grams goat cheese
  • 3 grams pomegranate seed
  • 1 gram zaatar
  • 1 gram thyme
  • 3 grams white onion
  • 2ml olive oil
  • 2 grams Himalayan pink salt
  • 1ml balsamic reduction


Balsamic Reduction Ingredients:

  • 20ml honey
  • 100ml balsamic vinegar

METHODS

  1. Reduce balsamic vinegar to one-third of its original volume.
  2. Sauté the onions and mushrooms with balsamic vinegar.
  3. Season with salt and honey.
  4. Add chopped fresh thyme.
  5. Plate as desired.
